It has always been one of our objectives to be ‘as local as possible’ when sourcing ingredients for our ramen kits. Of course, there are certain things within ramen-making that we can’t get locally, but we’re fortunate here in the Fraser Valley to have access to some of the best locally-raised poultry you can get. This includes one of our favourite ingredients ever: duck.
This kit is a limited run Duck Shoyu Ramen, based on a light, flavourful, and clear duck broth, made by simmering high-quality whole ducks sourced from Fraser Valley Specialty Poultry in Chilliwack. Topped with torched sous-vide duck breast chashu, leeks, pea shoots, and our classic marinated ajitama, we hope to shine some light on the versatility and flavour of duck in ramen-making.
